  Mr. Kohei Hatashita of Paella Estilo Aceh  in Nakagyo Ward, Kyoto, winner of the 4th World Paella Day Cup 2023 held in Spain in 2023. I visited the store on February 21st. It was a small restaurant with 7 seats at the counter and 4 seats in private rooms, but for the first time in a while I was impressed by the delicious and carefully prepared paella.

 The chef, Mr. Hatashita, is from Kyoto, and he made paella using pike conger and kelp soup at the world competition.I also had paella in Spain, and the taste of the rice in the paella I had in Kyoto was amazing. It was very delicious and I was able to immerse myself in a happy mood.

 In Japan, the consumption of rice has decreased dramatically, and we are very happy to see an increase in the number of restaurants that serve delicious rice dishes. Before the coronavirus pandemic, I was in charge of a about Japanese seminar in Spain in 2018, and during that time, I ate a lot of delicious food in the home of Spain. At that time, we were treated to a daily feast of seafood, salt-grilled green onions, and fruit. Especially in the morning, the freshly squeezed orange juice was especially delicious, and I refilled it many times.

 In Japan, we have takikomi rice, sushi, and fried rice, but paella is also a popular rice dish. The Kyoto chef’s ingenuity to make Spanish paella delicious with rice made from rike conger stock is a uniquely Kyoto-based innovation that will receive applause. I also wanted to interact with chefs from around the world through rice cooking. We will also promote collaboration with Okudo-san organization  and Okudosan Summit belong in Kyo-Suzume.
