Chirashi sushi with Suguki pickles

Yoshie Doi

On a Sunday in March, I had pickled Suguki , so I made chirashi sushi with suguki pickles, salmon, rape blossoms, and sesame seeds. It turned out to be even more delicious than I imagined how it would taste. I always use the same recipe and make it with pickled radish, but the pickled Suguki has a refreshing taste.

I cook rice with germinated brown rice and black rice, so it will be brown rice sushi. Ever since I was a child, I’ve loved experimenting with things, such as trying out how fried rice would taste from chirashi sushi or trying to make something with leftovers.

Even when I was single, I used to make homemade lunch boxes and bring them with me, so I enjoyed things like Somen bentos in the summer. After getting married, I looked forward to making bento boxes for my husband and daughter, and there was a time when I would make two bento boxes for lunch and dinner at her daughter’s request. It’s a fun memory.

Currently, I’m having fun trying to make something delicious using Kyoto’s specialties. It’s a fun time to come up with recipes with unexpected combinations. I also remember eating sweet potato and pickled croquettes and pizza at the restaurant and how delicious they were.

As I heard from Jay Abraham, America’s number one marketing consultant, Ice cream was invented in 2000 BC, and waffles have been baked for a long time. One day, an ice cream shop ran out of cups. Reluctantly, the ice cream man decided to use the waffle next to him as a cup. before that time Ice cream cones were never conceived as a commercial product. This was 3,900 years after ice cream was invented. In a similar case, both bread and meat have been eaten since 2600 B.C., but even though both bread and meat were grilled, humans combined these two breads and meat to make hamburgers. That was 4,300 years later.

The idea that took such a long time to come up with is a historical one, but as part of the fun of life, we want to enjoy combining various foods. Everyone, please enjoy chirashi sushi made with Suguki.
